Step 1: Prepare the Cake
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
In a large bowl, mix together the cake mix and strawberry gelatin. Add the eggs, vegetable oil, water, and lemon juice, then beat until smooth and well combined. Gently fold in the diced strawberries.
Divide the batter evenly between the two pans and smooth the tops. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
Step 2: Make the Frosting
While the cakes are cooling, prepare the frosting. In a large bowl, beat the cream cheese and butter until light and creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
Once the frosting is smooth, add the lemon juice, lemon zest, and vanilla extract. Beat for a few more minutes until the frosting is fluffy and spreadable.
Step 3: Assemble the Cake
Place one cake layer on a serving plate or cake stand. Spread a generous layer of frosting on top. Add the second cake layer and frost the top and sides with the remaining lemon cream cheese frosting.
Step 4: Enjoy!
For an extra decorative touch, garnish the cake with fresh strawberries, a sprinkle of lemon zest, or even a few mint leaves. Slice and serve to enjoy a beautiful, tangy, and sweet dessert that feels like a celebration.
