1 Prepare the Peanut Butter Mixture: In a medium-sized mixing bowl, combine the creamy peanut butter, softened unsalted butter, and vanilla extract. Stir them together until the mixture is smooth and well-blended. The butter will help to soften the peanut butter, making it easier to mix and roll into balls.
2 Add the Powdered Sugar: Gradually add the powdered sugar to the peanut butter mixture, about one cup at a time. Stir thoroughly between each addition until the mixture becomes thick and holds its shape. Depending on the desired consistency, you may need to add between 3 to 4 cups of powdered sugar. The more sugar you add, the firmer the dough will be, making it easier to roll into balls.
3 Roll the Balls: Once the mixture has reached a thick, dough-like consistency, use your hands to roll it into small balls, about 1 inch in diameter. Place the rolled balls on a parchment-lined baking sheet or tray. Be sure to leave a little space between them so they don’t stick together as they set.
4 Chill the Peanut Butter Balls: Place the baking sheet with the peanut butter balls in the refrigerator for at least 30 minutes. This will help the balls firm up, making them easier to dip in chocolate if desired.
