Mango Tango Cheesecake Cake

Instructions:
1. Preheat the Oven
Start by preheating your oven to 325°F (163°C). Grease and line the bottom of two 9-inch cake pans with parchment paper for easy removal after baking.
2. Prepare the Mango Cheesecake Layer
In a medium mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the vanilla extract and lemon juice, and mix until well combined. Next, add the eggs one at a time, beating well after each addition. Finally, stir in the mango puree until fully incorporated.
Once your cheesecake batter is ready, pour it evenly into the bottom of one of the prepared cake pans. Set the other pan aside for the cake batter.
3. Prepare the Mango Cake
In a large mixing bowl, combine the vanilla cake mix, mango puree, milk, melted butter, and eggs. Mix until the batter is smooth and well combined. The mango puree will give the cake a moist texture and a vibrant tropical flavor. Pour this cake batter into the second prepared cake pan, spreading it evenly.
4. Bake the Layers
Place both cake pans in the preheated oven. Bake the mango cheesecake layer for about 40-45 minutes or until the cheesecake is set and lightly golden on the edges. The mango cake should bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Once the cakes are done, allow them to cool in their pans for about 10 minutes before transferring them to wire racks to cool completely.
5. Make the Mango Glaze
While the cakes are cooling, prepare the mango glaze by combining the mango puree, honey, and lime juice in a small saucepan. Heat over low heat, stirring occasionally, until the glaze is smooth and slightly thickened. Remove from heat and let it cool to room temperature.
6. Assemble the Cake
Once both the mango cheesecake layer and mango cake have completely cooled, it’s time to assemble. Place the mango cake layer on your serving platter or cake stand. Gently remove the cheesecake layer from the pan and place it on top of the mango cake. The two layers should fit snugly together, creating a beautifully stacked cake.
7. Glaze the Cake
Drizzle the cooled mango glaze generously over the top of the cake, allowing it to drip down the sides for a glossy, tropical finish. You can use a spatula to smooth it out if desired.
8. Garnish (Optional)
For a finishing touch, garnish the cake with fresh mango slices and a few sprigs of mint leaves. The mango slices add a refreshing burst of fruit, while the mint leaves give a beautiful pop of color and a fresh, aromatic scent.
9. Serve and Enjoy
Slice into your Mango Tango Cheesecake Cake and enjoy! This cake is perfect for any occasion and will surely be a crowd-pleaser with its tropical flavors and elegant layers.
