Lemon Blueberry Yogurt Loaf

1 Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
2 Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
3 In a large mixing bowl, cream the butter and sugar together until light and fluffy (about 3–4 minutes).
4 Add eggs, one at a time, beating well after each. Stir in vanilla extract, lemon zest, and lemon juice.
5 Add dry ingredients to the wet mixture gradually, mixing until just combined.
6 Stir in the yogurt and mix until smooth.
7 In a small bowl, toss the blueberries with 2 tablespoons of flour. This keeps them from sinking during baking.
8 Gently fold the coated blueberries into the batter.
9 Pour the batter into the prepared loaf pan and smooth the top.
10 Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
11 Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
