Instructions:
1. Prepare the Dough:
• Start by placing the double cream cheese, butter, and sugar in a large bowl. Using a hand mixer or your hands, combine the ingredients until the mixture is smooth and creamy.
• Next, add the ground hazelnuts, flour, and brown sugar to the mixture. Knead everything together to form a soft dough. The dough will be tender and slightly crumbly due to the cream cheese, which helps create that delicate texture.
• Once the dough comes together, wrap it in plastic wrap and chill it in the fridge for at least 30 minutes. This step helps the dough firm up a little and makes it easier to shape the crescents.
2. Shape the Crescents:
• Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
• After the dough has chilled, take small portions and roll them into little balls, about the size of a walnut. Then, roll each ball into a small log and shape it into a crescent by curving the ends slightly.
• Place the formed crescents on the prepared baking sheet, leaving a little space between them as they will expand slightly while baking.
3. Bake the Hazelnut Crescents:
• Bake the crescents in the preheated oven for about 15-20 minutes, or until they are golden brown and slightly firm to the touch. Be careful not to over-bake them, as you want them to remain soft on the inside.
• Once baked, remove the crescents from the oven and allow them to cool on a wire rack.
