Instructions
1. Make the Chocolate Cake Layers:
1 Preheat the oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment paper.
2 In a mixing bowl, whisk together all dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt.
3 In a separate bowl, whisk sugar, oil, eggs, and vanilla extract until smooth. Add in the buttermilk.
4 Gradually mix the dry ingredients into the wet mixture. Slowly pour in the hot coffee or water, mixing until the batter is smooth.
5 Divide the batter evenly among the prepared pans. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool completely.
2. Prepare the Whipped Chocolate Frosting:
1 In a large bowl, beat the cold heavy cream, powdered sugar, cocoa powder, and vanilla extract using an electric mixer.
2 Beat until stiff peaks form. Chill the frosting in the fridge until ready to use.
3. Make the Chocolate Ganache Drip:
1 Heat the heavy cream in a saucepan or microwave until just steaming—do not boil.
2 Pour the hot cream over the chocolate chips in a bowl. Let sit for 1 minute.
3 Stir until smooth and glossy. Allow to cool slightly before using on the cake.
4. Assemble the Cake:
1 Place one cooled cake layer on a serving stand or plate. Spread a generous layer of whipped chocolate frosting.
2 Top with a mix of chopped fresh strawberries and blueberries.
3 Add the second layer and repeat the frosting and berry layer.
4 Add the third cake layer and top it with decorative swirls of frosting.
5 Carefully pour the ganache over the center of the cake and gently push it to the edges, allowing it to drip naturally down the sides.
5. Garnish and Serve:
• Decorate the top of the cake with whole fresh strawberries and blueberries.
• Add chocolate curls, sprinkles, or edible flowers for an extra-special finish.
Tips for Success:
• Use very cold cream for the frosting to ensure a stable whip.
• Don’t overmix the cake batter once the hot liquid is added.
• Ganache should be slightly warm and pourable but not hot when applying.
