1. Prepare the Crust
Preheat your oven to 325°F (163°C).
In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly moistened.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 10 minutes, then remove from oven and set aside to cool.
2. Make the Filling
In a large bowl, beat the cream cheese and sugar until smooth and fluffy (about 2–3 minutes).
Add in the vanilla extract and flour and mix well.
Add the eggs one at a time, beating after each addition. Scrape the bowl as needed.
Finally, stir in the sour cream until smooth.
3. Bake the Cheesecake
Pour the filling into the prepared crust and tap the pan gently to remove air bubbles.
Bake for 1 hour, then turn off the oven and leave the cheesecake inside with the door slightly ajar for another 1 hour.
Cool completely on the counter, then refrigerate for at least 4 hours or overnight.
4. Make the Strawberry Sauce
In a medium saucepan, combine strawberries, sugar, lemon juice, and water.
Simmer over medium heat for 5–7 minutes until the berries soften and the syrup thickens.
(Optional) For a thicker sauce, stir in a cornstarch slurry (1 tbsp cornstarch mixed with a little water), and cook for 2 more minutes.
Let the sauce cool to room temperature.
5. Make the White Chocolate Drizzle
In a microwave-safe bowl, combine white chocolate chips and heavy cream.
Microwave in 20-second intervals, stirring after each, until smooth and melted.
6. Assemble the Cheesecake
Once the cheesecake has fully set, spoon the strawberry sauce over the top, letting it gently drip over the edges.
Drizzle with the white chocolate, and optionally sprinkle with extra graham cracker crumbs.
7. Serve and Enjoy
