Beware of the risk of addiction, cinnamon cheesecake is a very old recipe handed down from your grandmother.

Instructions:
1. Prepare the Base:
• Start by preheating your oven to 180°C (350°F).
• Place the oatmeal cookies in a food processor or blender and pulse until they are finely crushed. Alternatively, you can place them in a ziplock bag and crush them with a rolling pin.
• Melt the butter and mix it with the crushed cookies until everything is well combined.
• Press this cookie-butter mixture into the bottom of a greased 9-inch (23 cm) springform pan. Use the back of a spoon to press it down firmly and evenly to create a solid base. Set it aside while you prepare the filling.
2. Prepare the Filling:
• In a large mixing bowl, combine the low-fat quark, double cream cheese, eggs, and sugar. Use a hand mixer or whisk to beat the mixture until smooth and creamy.
• Add the heavy cream, melted butter, ground Ceylon cinnamon, and bourbon vanilla sugar to the bowl. Continue mixing until the filling is fully blended and silky smooth.
• If you prefer a richer flavor, you can adjust the amount of cinnamon to your taste, but be sure not to overpower the natural creaminess of the cheese.
3. Assemble the Cheesecake:
• Pour the creamy cinnamon filling onto the prepared cookie base. Smooth the top with a spatula to ensure an even layer.
• Place the cheesecake in the preheated oven and bake for about 50-60 minutes. The cheesecake is ready when the edges are lightly golden, and the center is set but still slightly wobbly. If the top starts to brown too quickly, you can cover it loosely with aluminum foil.
• Once baked, turn off the oven and leave the cheesecake inside for another 10 minutes with the oven door slightly ajar. This helps prevent cracking.
4. Cool and Chill:
• After the cheesecake has cooled at room temperature, place it in the fridge to chill for at least 4 hours, or preferably overnight. Chilling allows the flavors to meld together and gives the cheesecake a smooth, firm texture.
5. Serve and Enjoy:
• Once the cheesecake has fully set, remove it from the springform pan and place it on a serving platter.
• Optionally, you can top it with a dollop of whipped cream for extra indulgence.
• Slice into generous portions and enjoy the creamy, cinnamon-spiced goodness.
